recipes

So, I have been all about whole wheat lately. I am getting very anxious to get into a bigger place and finally using my awesome wheat grinder. Until then, I will use the bag o'wheat that the Chapman family gave us.
And, here is a recipe for Whole Wheat Muffins that we also got from the Chapman family.
They had us over for dinner and had these muffins.
I made some the very next day.
They are good.

WHOLE WHEAT MUFFINS

2 C. Whole wheat flour
1/4 tsp. Salt
1 tsp. Baking Soda
1 C. Brown sugar
1 C. Milk
1/3 C. Butter, melted
1 Egg
1 tsp. Vanilla

Combine the flour, salt and soda.
In a separate bowl, mix the sugar, milk, butter, egg and vanilla.
Pour wet ingredients into the dry ingredients and stir til just combined.
Spoon into a greased muffin tin.
Bake at 350 degrees for 20 minutes.
Yield 12 muffins.



Next comes a bread recipe from my awesome sister.
She made some while I was at her house this summer and I finally got the recipe the other day. She makes hers half whole wheat half white wheat.
The first time I made it, I had barely any whole wheat, so it was mostly white.
This second time around I made it half and half. I really like it. It makes great toast and is good for PB & J sandwiches too.
Oh, and it is SO easy to make. You do need a mixer with a dough hook.

BREAD

6 C. Flour (half whole, half white)
1/3 C. Honey
1 TBSP. Salt
1 1/2 TBSP. Yeast
2 1/4 C. Very warm water
1/4 C. Butter, melted

Put all the ingredients in your mixer with the dough hook attachment.
Add the water and butter last.
Turn on you mixer and let it mix/knead the dough for 10-15 min.
(go fold laundry, unload the dishwasher, or do some blogging)
After 10-15 min. Turn dough out into a well greased bowl. Swish the dough around so that it is all oiled. Cover with plastic wrap. Let rise til double in size.
Punch dough down. Grease two loaf pans with shortening. Split dough into two pieces. Shape into loaves and put them in the pans.
Place the loaves into an UN-heated oven and let rise til double.
Turn oven on to 350 degrees and bake for 30-40 min.
When done, you can spread butter over the tops of the loaves if you want.

mmm...so I made the muffins this morning to go with our breakfast. Thanks! They are delicious! I had been looking for a whole wheat muffin recipe, but hadn't had any luck. They are perfect. I also love homemade bread...I've converted to ONLY homemade bread in our house. I make 5 loaves every 2-3 weeks and just freeze them. It is SOO worth it. My recipe is 4 c whole wheat, 4 c. oatmeal and 7 c white flour if you're ever interested...Delicious pics too!

i, too, have been on a wheat kick. thanks for these recipes. i just made pumpkin wheat bread over the weekend and i love the way wheat makes me feel. full of wholesome goodness :)
